
As a mum, mornings can be busy. Between getting everyone ready for school and work, there isn’t always time for a complicated breakfast. Sometimes we just need something simple, quick, and nourishing.
But being a mum of growing boys also means breakfast can’t be too small. It needs to fill their tummies, keep them going through the morning, and, of course, taste good!
One of our favourite go-to breakfasts is easy ramen. It’s quick to make, satisfying, and uses ingredients that are easy to find at Woolworths. Ingredients
- Ramen noodles – Hakubaku Japanese Ramen Noodle 270g | Woolworths
- Miso paste – Hikari Japanese Paste White Miso 400g | Woolworths
- Bone broth concentrate – . Best Of The Bone Broth Concentrate Original 390g | Woolworths
We occasionally switch things up with different flavours, but the Original is our usual choice. Sometimes we use the Organic Miso flavour instead. If using the miso broth concentrate, we simply leave out the miso paste.
- Optional: Soft-boiled eggs for an extra protein boost
Method
Makes 2 generous serves for growing boys
- Cook the ramen noodles according to the packet instructions.
- In a separate pot, bring 4 cups of water to the boil.
- Add 2 tablespoons of bone broth concentrate and 2 tablespoons of miso paste. Stir well until combined.
- Drain the noodles and divide between two bowls.
- Pour the broth over the noodles and serve.
Optional Soft-Boiled Eggs
The favourite in our house is a soft-boiled egg with a slightly runny centre.
- Carefully place the eggs into boiling water.
- Cook for 6½ minutes.
- Transfer immediately to a bowl of cold water to stop the cooking process.
- Peel and serve on top of the ramen.
In my boys’ opinion, this makes the perfect ramen egg!
